Résumé

Manuel Moreno Fraginals explained that “Manufacturing, using slave labour on the great plantations, developed a specialized system of linguistic terms, not compiled until now, which the historian needs to decipher in order to interpret correctly the documents of the epoch and the epoch itself”. Following this line of thought by the great Cuban researcher we have organized an interdisciplinary project in which historians and linguists together examine the original documentation of the sugar industry in order to establish a body of the most representative vocabulary of the sugar mills in the Canary Islands during the XVI century. From the historical point of view this could prove important, both for the transcription of the documents themselves (basically inventories of the sugar mills) and also because it will offer first hand material which will help us to read and understand many other documents which contain the same type of vocabulary
