Abstract

Marine and fresh water living resources currently representa contribution from 158 mt of food for the human population,considering both extractive fishing, shellfishing andaquaculture. Within the chemical composition, toxic heavymetals acquired fundamental importance within the policyof food security elements due to its bioaccumulative nature(biological amplification within the trophic chain), althoughtheir maximum levels and acceptable intake levels areregulated by legislation derived from the WHO and EU.The present communication resulted from research workcarried out by TOXMAR (Toxicology and Marine Pollution) research team of the ULL in fresh and preserved marinefood of current consumption in the Canary Islands, focusedon the assessment of the toxicological risk.As a final conclusion of these investigations, initiated in1972, one can conclude, in view of the low concentrationsof Hg, Pb and Cd found in all the foods studied (algae,molluscs, crustaceans and fish) as well as by the scarcelyictivorous regime of the Canary Island population, thatthere is no particular toxicological risk in this zone.
